CAPPELLETRICE OR CAPPELLETTI MACHINES - ALL SIZES
Machines for Cappelletti, with interchangeable moulds, with sheets of 160, 1000 mm, for the production of single sheet ravioli, folded according to a mechanical process called "pinzatto" (pinch)
The "small hats" cappelletti, are formed by cutting the sheet of dough into squares or circles, the stuffing is dropped inside, then the machine "pinches" the ravioli, thanks to a device, which gives them this characteristic shape.
The Cappelletti of all formats, can be formed from ravioli square, circular or half-moon, which contributes to vary their form and distinguish them depending on the typical recipes which they are stuffed: meat, ricotta etc.
Depending on the form and size, whether they have smooth or jagged edges, they will be called Cappelletti, Tortellini or Agnolotti.
It is also possible not to use the device to "pinch" and form a half-moon or square sheet ravioli.
The stuffing is fed by a continuous power system and the quantity can be adjusted during production.
